1. Maui Thai Bistro: New owners Chit Tharnthong and Oey Meesook join the incredible Chef Prakong Tongsod to create the best Thai food on the island--artisanal, authentic and contemporary. The bistro specializes in single-dish lunch items, as well as classic dinner dishes with Chef Prakong's innovative Hawaiian fusion flair. Lunch is served 11:30 a.m. to 2:30 p.m. Tuesday to Sunday. 2. Migrant: Award-winning Chef Sheldon Simeon has left Star Noodle and now serves Wailea diners fantastic Filipino-inspired cuisine at this recently opened restaurant adjacent to Chef Mark Ellman's marvelous Mala at the Marriott. 3. Matteo's Osteria: Chef-Owner Matteo Mistura showcases his Four Seasons Italian culinary skills with a whole new menu. Open 11:30 a.m. to 3 p.m. and 5 to 10 p.m. weekdays and 5 to 10 p.m. weekends. Matteo and his wife, Gianna, delve deep into the Italian food and wine culture to become the hosts to Maui's first Italian restaurant and 70-plus wine bar.
